Ultimate QUICK Tailgate Menu!

It's that time again! TIME FOR FOOTBALL & FOOD!

Recently on my Instagram @fabfoodiebambi Live's show "In The Kitchen" I spoke with my dear friend, award winning celebrity home chef, Brian Leigh of BT Leigh's rubs & sauces, and I asked him to share some of his tailgating secrets and in his famous, Chef B.T. style, he did not disappoint.


Hailing from Bowling Green, Kentucky by way of Cleveland,

Ohio, his hometown, this flavor

boss always brings his "A" game when it comes to creating great recipes and combining delicious flavors!

From his award-winning sauce and rub company with a variety of cool products like "Somethin' To Beef About" rub, "The Magical Mop" sauce, and his top selling sauce, "The Clevelander" paying homage to his hometown to his global captivating appeal on PBS network food competition series, "The Great American Recipe", Chef Leigh's passion for the art of food truly shines brightly in everything he showcases!



Chef Brian gave us a quick crowd-pleasing menu that is sure to please, plus it gets you from behind the grill so you can enjoy time with your guest!


BEER CHEESE & PRETZELS

Things needed:

-16 oz of your favorite cheese

-2 teaspoons of sodium citrate

-1 cup of your favorite beer

-1 tablespoon of BT Leigh's "Somethin' To Beef About" rub seasoning

-A bag of large size pretzels


In a medium saucepan over medium high heat, on a stove or on a hot grill.

Pour in beer in the saucepan, add sodium citrate, stir and mix well.

Add cheese and rub seasoning. Mix well until melted

Pour into a serving bowl surrounded by pretzels


ONE BRAT, 4 DOGS

Things needed:

-A pack of Bratwursts

-A pack of Pretzel

hotdog buns

-A pack of hotdog buns

-A medium sliced onion

-A jar of sauerkraut

-A jar of brown mustard

-A bag of Crispy Jalapenos

-A bag of Crispy Dill pickles

-*A bag of Crispy Fried Onions

(*can be used as substitute for grilled onion on some of the Bratwurst creations)

-A bottle of BT Leigh's "The Clevelander" sauce

-A bottle of BT Leigh's "Magical Mop" sauce


Cook Bratwurst on grill until done.


In a pan, add tablespoon of oil and butter and sauté onions until tender and translucent. Set aside.


DOG 1: BT LEIGH'S DOG

Cover the inside of a hot dog bun with BT Leigh's "The Clevelander" sauce.

Use a basting brush to smooth sauce on the bun. Place bun sauce side on the grill until charred/ grill marks.

In the bun, add a bratwurst, add more Clevelander sauce over the brat, add grilled onions on top, and spread brown mustard over the onions


DOG 2: BEER CHEESE DOG

Cover the inside of a hot dog bun with BT Leigh's "Magical Mop" sauce.

Place bun sauced side on the grill until charred/ grill marks.

In the bun, add a bratwurst, add beer cheese on the sides and on top of the brat, add grilled onions on top, and more beer cheese over the onions


DOG 3: GERMAN DOG

Cover the inside of a hot dog bun with BT Leigh's "Magical Mop" sauce.

Place bun sauced side on the grill until charred/ grill marks.

In the bun, add a bratwurst, add ground mustard on the side of brat, add grilled onions, on top of brat, add sauerkraut, and more brown mustard over sauerkraut


DOG 4: MAGICAL MOP DOG

Cover the inside of a hot dog bun with BT Leigh's "The Clevelander" sauce.

Use a basting brush to smooth sauce on the bun. Place bun sauce side on the grill until charred/ grill marks.

Sauté a few of the grilled onion in about 2 tablespoon of BT Leigh's "Magical Mop"

In the bun, add a bratwurst, add the "magical mop" grilled onions on top, sprinkle crispy jalapenos, and crispy dill pickles.


ENJOY!!
