This quick and easy Spring salad and zesty Italian dressing recipe is sure to please your family and your guest's eyes as well as their appetite! Lovingly named after my dad, "Papa Joe" who still at 89 years of age plants and grows wonderful vegetables for our family to enjoy!

Papa Joe's Abundantly Delicious Garden Salad

  • In a large bowl, toss in ALL of your favorite vegetables.

  • Add a small amount of Fab Foodie Club's Zesty Italian dressing or your favorite "non-creamy" salad dressing. Just to lightly coat the salad, you don't want the salad to become soggy.

  • Marinate for 15 to 30 minutes. Serve and enjoy!

  • In a separate bowl, rinse off *one canned or jarred black-eyed peas. Add dressing to cover. Marinate for 15 to 30 minutes. Serve salad and garnish with black-eyed peas.

*You can use fresh black-eyed peas. Wash, soak, cook, and rinse. I used and suggested can/jarred black-eyed peas to save time.

Fab Foodie Club's Zesty Italian Dressing

Things needed:

  • 1/2 Canola Oil

  • 2 tbsp Apple Cider Vinegar

  • 1 tbsp of Water

  • 1 tsp of Italian Spices

  • 1 tsp Minced Garlic

  • 1 tsp Minced Onion

  • 1/2 tsp Black Pepper

  • 1 tbsp of honey (to your taste)

In a bowl, whisk ingredients together or use a jar. Securely cover the jar with the jar's lid and shake until completely mixed.
