Whew, child! Have you seen egg prices lately? $8 for 18 eggs!
There is no way! Yet, you can buy chicken legs and thighs at .79 cent to $1.29 a pound! Ain't that the same chicken? Now one chicken can lay up to A DOZEN of eggs a week, so please help me understand the math of why a whole chicken cost less than a few eggs?
Well, I am going to leave that alone because the math ain't mathing!
So, in the meantime, here are some egg alternatives that you can use:
Just Egg: Vegan alternative (makes great omelets)
Applesauce: Replace each egg with 1/4 cup of applesauce
Flaxseed: Whisk 1 tbsp. of ground flaxseed with 3 tbsp. of water, let sit for 20 minutes. Texture should look like egg whites
Mashed Bananas: Replace each egg with 1/2 of a ripe banana.
Avocado: Replace each egg with 1/4 cup of pureed avocado
Tofu: Replacement for hard-boiled eggs in salads and sandwiches
You can create delicious dessert with Applesauce and Mashed bananas. Even cakes but do not use these egg substitutes for pound cake for your mixture will have a poor consistency.
